My Loki helmet is proving quite popular on Facebook, so I thought I'd share with the Internet on how to make it.

The red lines of some of these patterns, what do we do with them? It looks like you sort of carved into them.

Indeed, I use a metal skewer to carve the shapes in. Use a ball point pen first to make sure you don't go out of the lines.

What sort of wire did you, or would recommend using, with the foam?

It goes by a few names, chicken wire, armature wire. It's a light to medium weight wire, strong but not too rigid as to be unworkable. You can pick it up from any hardware store.
